Keep local copies of files with personally identifiable information (PII). Print (unless you get an AirPrint-capable HP Printer). Run an ever-expanding list of other interesting applications. Wolfram Alpha), run specialized applications (caveat: no sensitive work-related files should be stored here! see below) Read/browse files on cloud services such as Dropbox, Box.Net, iCloud etc. 
Evernote, but please don't put sensitive information here, as Evernote stores it in the cloud)
Read newspapers (various Newspaper apps).
